Who wouldn't want some buttery crisp cookies studded with mini chocolate chips? Plus, they're in the shape of cute little snowballs!
I had my first snowball cookie about 5 years ago around the holiday time, and I've been hooked on them ever since! I can't believe I haven't had them sooner, and to be honest, I feel slightly robbed I've lived 25+ years without them! Most snowball cookies I've eaten tend to have a variety of nuts as their mix-in, but since I have a husband who is allergic to nuts, I've stayed away from baking with nuts as much as possible for obvious reasons. This guy likes to sneak taste tests of the finished goods sometimes before I can warn him there may be nuts in there! I'm actually not the biggest fan of nuts in my baked goods anyways so this works out for both of us (I know, I'm pretty sure I'm in the minority here)!
Because of this, mini chocolate chips are the perfect mix-in for our family, and hopefully for yours too! I mean, who can say no to chocolate chips? Especially cute ones of the mini variety.

Yield: Makes 12-14 cookies
INGREDIENTS
1/2 cup unsalted butter, softened
1 and 1/4 cups powdered sugar, divided
1/2 teaspoon vanilla extract
1 cup + 2 tablespoons all-purpose flour (spooned and leveled)
1/8 teaspoon salt
1/4 cup mini chocolate chips
INSTRUCTIONS
Preheat oven to 350 F for standard oven. Line one large baking sheet with parchment paper and set aside.
In a medium bowl, cream together the butter, 1/4 cup of powdered sugar (set the remaining 1 cup aside to roll the cookies in), and vanilla extract for 2 minutes or until well combined.
Mix in the flour and salt until fully combined, stopping to scrape down the sides of the bowl as needed. Gently fold in the mini chocolate chips until evenly distributed.
Using a 1-tablespoon cookie scoop (or measuring tablespoon) scoop out the cookie dough, roll into balls, and place on the prepared baking sheets. The cookies do not spread much, so they do not need to be separated apart by too much.
Bake for 14-15 minutes or until the cookies are set and the bottom is lightly browned. It's important to not under-bake or over-bake these cookies.
Allow cookies to cool slightly for about 5 minutes, then roll each cookie in the remaining 1 cup of powdered sugar while they're still warm. Allow the cookies to cool completely and roll all of the cookies one more time in the powdered sugar.
