Chocolate Churro Waffles

Yes, you read that right! Warm crisp chocolate waffles dredged in sweet cinnamon sugar makes this a perfect breakfast option. Plus, it's super simple because it uses a pre-packaged pancake mix! Shhh, I won't tell if you won't.


I don't know if it's just me, but there never seems to be enough time in a day. If I can save some time, I'm all for it! I love Trader Joe's because they have great meal options, whether they be refrigerated, frozen or shelf-packaged (no, TJ's did not pay me to say that... I just really love Trader Joe's!).


Their Pancake & All Purpose Baking Mix is a perfect example. You can save precious time from your day and make bread, scones, biscuits, and of course, waffles! Don't get me wrong, original waffles are good, but chocolate churro waffles are GREAT! The waffles are crisp from the cornstarch, and have a subtle hint of cocoa which pairs perfectly with the sugary cinnamon goodness of the churro coating. I like to fill the waffle pockets with extra churro topping for an even sweeter bite! Trust me, I don't think you'll ever be able to go back to regular original waffles again.



Prep Time: 15 minutes

Cook Time: 10 minutes

Total Time: 30 minutes

Yield: Makes ~12 four-inch waffles


INGREDIENTS


For the churro coating:

  • 1/4 cup granulated sugar

  • 1 & 1/2 tablespoons light brown sugar

  • 1 & 1/2 tablespoons cinnamon

For the waffles:

  • 1 & 3/4 cups Pancake Baking Mix (using Trader Joe's Buttermilk Pancake & All Purpose Baking Mix)

  • 1 cup water

  • 1 egg

  • 1/4 cup vegetable oil

  • 3 tablespoons cornstarch

  • 3 tablespoons unsweeted cocoa powder

  • 1 tablespoon granulated sugar

  • 1/4 cup mini semi-sweet chocolate chips


INSTRUCTIONS

  1. First, make the churro coating by combining the brown sugar, granulated sugar, and cinnamon in a shallow dish. Set aside.

  2. Preheat waffle iron. I am using a 4 inch round waffle iron, but any waffle iron will do!

  3. In a medium bowl, sift the cocoa powder and mix together with the pancake mix, cornstarch, and granulated sugar.

  4. Add the water, oil, and egg and mix until combined.

  5. Spoon about 2 tablespoons of waffle batter into the waffle iron and heat until waffle is crispy and easily pulls away from the waffle iron.

  6. Dredge both sides of the waffle in the churro coating. Roll the sides of the waffle in the churro coating as well to ensure maximum cinnamon sugary goodness!

  7. Repeat steps 5-6 until all waffles are cooked. Serve immediately and enjoy!
