Sugar Cookie Bars

Sweet sugar cookies topped with lots of colorful sprinkles not only make this fun to look at, but also fun to eat!


I had a leftover egg yolk from a fun baking session I had done with my sister-in-law and the Asian in me just couldn’t let it go to waste. So what did I decide to do? Make these super easy and fun sugar cookie bars since the extra egg yolk would give these cookie bars that added richness and chew!

Sugar cookies are great, but these bars take classic sugar cookies and elevate them with their fun square shape and addition of colorful sprinkles! Cookie bars are a great time saver if you’re ever short on time because you can just quickly spoon the dough into the pan as opposed to scooping or rolling out individual dough balls. These sugar cookie bars are a fun and festive addition to a birthday party, backyard BBQ, or just when you’re in the mood for something super easy and sweet!



Prep Time: 15 minutes

Bake Time: 20-23 minutes

Total Time: ~ 35-40 minutes

Yield: Makes 16 cookie squares


INGREDIENTS

  • 3/4 cup + 2 tablespoons unsalted butter, room temperature

  • 1 cup granulated sugar

  • 1 large egg + 1 egg yolk, room temperature

  • 2 teaspoons vanilla extract

  • 1/2 teaspoon salt

  • 1 & 1/2 cups all-purpose flour

  • 1/4 cup sprinkles + more sprinkles to top (I like to use jimmies)


INSTRUCTIONS

  1. Preheat the oven to 350 F for standard oven. Line an 8x8 inch square baking pan with parchment paper, and then aside.

  2. In a large bowl, cream together the butter and sugar with a paddle attachment until light and fluffy, about 2-3 minutes.

  3. Scrape the sides and bottom of the bowl, and then add in the egg, egg yolk and vanilla. Mix on medium speed for about 1 minute until well combined.

  4. Add in the flour and salt and then mix on low until the flour has been incorporated. Be sure not to over-mix.

  5. Using a rubber spatula, gently fold in the sprinkles. You don't need to mix much here.

  6. Spoon the batter into the prepared baking pan, and evenly spread the dough with the top of the rubber spatula.

  7. Sprinkle additional jimmies on top of the dough for an added pop of color!

  8. Bake for about 20-23 minutes or until the edges are a very light golden brown. Do not over-bake. Most of the cookie will be pale in color and that is fine!

  9. Cool for about 15 minutes, then cut into squares and enjoy!
